I never expected Olive Oil to be as complicated as wine until I visited Oliviers & Co.
One afternoon with my blogger friends, Paul and Nikita, we were brought to a site where olive oil is the main character. Only within the building of Central Square in Bonifacio High Street, we had an informal olive oil appreciation class.
Olivers & Co. was born out of the question, “Like wines from the most reputable vineyards, why can’t superior olive oils be worthy of being recognized as grand cru?” Since 1996, Albert Bausaan, founder and CEO of O&Co. committed to showcasing to the world only the best olive oils from different producers and mills all over France, Italy, Spain, Croatia, Greece and Portugal. With the many factors involved like the climate, irrigation, nature of soil, etc., the mediterranean is still where the best olive oils are produced.
The French-owned company acknowledges that its producers are the backbone of the company. Which is why in every bottle sold in the stores, the label includes the country of origin, producer, mill, date of harvest and other details that will credit the producer and show transparency to the customers. This is also to show that O&Co. labeled bottles are traced from harvesting to bottling.
Strictest guidelines are applied in all steps before selling out to O&Co. stores. All olive oils have to go through a meticulous sensory specialist and analyst to examine and verify all products to be sold. From its color, aroma, taste and all other aspects, a specialist will conclude if the olive oil produced reached its highest quality. Like precious gems, olive oil bottles per origin are limited depending on how much high quality olive oil they produced during that season.
If I could have my dream kitchen pantry, it will surely include Olivers & Co. products.
All green and golden bottles you see in this cabinet are various types of olive oil.
We had a mediterranean journey in the form of olive oil tasting. From the lightest to the most robust, we were swept away by how exquisite these olive oils smell and taste like.
Tenuta Di Ghizzano, one of the selections of ‘green gold,’ is the most expensive olive oil bottle in the store. The profile is creamy, grassy, strong yet so fresh. Ideal to use this olive oil to drizzle your pasta, salad or any savory dish you prepared.
Since produced olive oil are limited in numbers, it’s hard to tell if this bottle is still available in BGC branch.

Just for you to know, this is not a special treatment for us. Anyone who would like to taste Olivers & Co. olive oil and other condiments could actually try it inside the store. Taste them before you buy them. Acceptable in our society that not everyone has that knowledge, even chefs, on what’s the appropriate kind of olive oil for your recipes. O&Co. staff will assist and guide you to find the perfect olive oil bottle you’re looking for.


Also, I was impressed by other O&Co. condiments like the rich balsamic vinegar, truffle oil and salt, and all kinds of sweet chocolate spread.

Cooking Time

After taste testing almost all the products, our cooking skills were now tested using the small kitchen facing the glass window. Of course, using O&Co. products, we were assigned to create 3 recipes as a group. We technically divided the recipes to each of us for more distinct roles. But we ended up helping one another in slicing, frying, mixing, plating and styling our final output.
First to finish, Fruity Salad with chopped greens, apples, grapes, nuts, Fennel Specialty Oil and Apple Condiment.
Paul takes the credit for cooking this Pesto Pasta.
Lastly, Pan Seared Garlic Chicken received so much love from everyone who tasted in the room. We tried dipping it in various O&Co. fruity condiments mixed with O&Co. specialty oil, the chicken tasted even more fantastic.
