How do you like your steak? I’d answer you medium rare to medium. How do you like your pasta? I have one thing to say, it has to be “al dente.”
Fly Ace Corporation invited me to celebrate National Pasta Month last October with Chef Davide Lombardi at his restaurant called Lucia. We spent the whole afternoon discussing the center of everyone’s attention, Doña Elena Al Dente pasta.

Doña Elena Al Dente

The one and only Artisan quality pasta is made using high quality, 100% durum wheat semolina or hard wheat. I learned that afternoon that pasta made from Durum Wheat is the only pasta that can be considered al dente. What made Doña Elena even more special is the use of special bronze dies, which allows the pasta noodles to have a rough surface as it creates ridges to absorb more sauce when cooked. Through its artisan process – slow drying and not subjected to heat – Doña Elena Al Dente has been recognized by top chefs and prefers to use this kind of pasta for their developed recipes.
Chef Davide Lombardi
The open kitchen made itself useful when Chef Davide Lombardi, Culinary Instructor at Center for Culinary Arts (CCA), grabbed his pan, spatula, pasta and all other ingredients to show off his pasta-cooking skills. Being known in the culinary industry as the Italian chef who grew up in Italy with his mom’s homemade pasta, I am not surprised to see the pasta dishes rolling and jumping out of the pan like watching a lifestyle cooking show on TV. Live entertainment was pulled off by this culinary icon.
Pre-selected personalities from the media had the chance to star in that afternoon’s cooking show. 3 teams battled with each other to create their pasta dish using Doña Elena Al Dente pasta.

Tita Nina lightened the mood by inspiring us with her kitchen stories back when she was studying in Cornell University until today as the Editor-In-Chief of Appetite Magazine.
